Stone-Milling & Soba Making
Grind buckwheat kernels using a traditional stone mill, then make 500g of soba (approximately 5 servings) by yourself. Your soba chef will guide you carefully through each step, so first-time participants can enjoy the experience with confidence.
Enjoy the Edo Soba Meal
Compare early Edo-style miso dipping sauce with modern hon-gaeshi soy-based dipping sauce, as well as your own handmade soba with the chef’s demonstration soba. Together with grilled miso, Edo-style condiments, sobagaki, shrimp, and seasonal vegetable tempura, experience the evolution of soba culture from Edo to modern Japan in one meal.
